One of the tests of one’s cooking skills is how well one can make an omelette, and while I’m no professional chef, I can make a good omelette. I make them for breakfast, lunch, or dinner, and this morning, I dug around in the refrigerator and found the fixings for a fine enough omelette. This is S.’s omelette, made with some of her favorite ingredients: salsa, spinach (S. loves spinach!), feta cheese (ditto), and some herbs. Add some toasted baguette, and you’ve got a pretty happy S. on your hands. And that, my friends, is priceless!
